Tiramisu and Vanilla Bean Scones

Tuesday, March 5th, 2013

Jon bought me two bottles of hard-to-find vanilla bean paste that I have been looking for since forever! He also likes vanilla bean scones from Starbucks in which I scolded him for buying it and not asking me to make it first. His birthday was this week so I decided to make him… you got it!! Vanilla bean scones! Good job, detective! ;)

Drooling yet? I can’t look at these pictures because I still have dough and glaze in the fridge and could easily make them right now. But I will not. I cannot. I have to salvage whatever self-control and discipline I have left. I must not. I must not look at this photo anymore… I… stop it! Picture, STOP LOOKING AT ME AND TEMPTING ME WITH YOUR DELICIOUSNESS!!! :(

He was so happy with these and shared it with everyone at church on Saturday, including one of my kids (Alan) who is 11ish. I think the one Alan ate was a magic scone because it flipped a switch inside his head and for the rest of the night, he kept following me and asked questions about cupcakes, sweets and pastries in general. He asked where my shop is located, what else I can make, what’s in the vanilla scones that make it so delicious. It was so adorable and it made my heart melt :)

Then, for whatever reason, I decided to make THESE. These delicious, addictive, magical mini cuppycakes of happiness. I fell in love all over again. It’s a mini vanilla cupcake soaked in a Kahlua espresso syrup topped with a whipped chantilly cream. Even when typing that sentence, I closed my eyes and thought about the first time I had that flavour combo and I was taken away again. I’m so thankful I don’t have any left and that they’re all at Gary’s. BTW, Gary is the photographer for my new website (will share details with you later ;) winkwink!). Jon said that these were the “best cupcakes he’s ever tasted from me”. Jon always knows the right thing to say! This wasn’t too sweet because it was topped with chantilly cream (vs heavy buttercream) and Asians with their super-sensitive-sweets-palette can pop a few without feeling guilty. I know this because I was one of them. Dang it!!

On top of combat, I am now doing 3 days of dance and a sports-conditioning class which I am suppose to be kicking butt in but ironically it is kicking MY butt. Since adapting to this new and intense training schedule (which is amazing but my body is sore all the time–the good kind of sore), I started gaining a lot of MUSCLE. I know this because my clothes don’t fit anymore (yay for shopping time!) and people whom I haven’t seen in a while have made comments about how they don’t recognize me anymore… including my shop consultant at my favourite business attire clothing store. Miraculously, I fit into sizes that I’ve never fit into before. Life is pretty good right now! Except this week BECAUSE I have to increase my training sessions because I had um… way too much delicious food in the past few days. I had 2x mini tiramisu cupcakes… and a few *cougH* scones… (omg, if you had them fresh out of the oven dipped in vanilla bean glaze, you’d be all over it too!), grilled cheese sandwich and mango tofu smoothie (mango juice + tofu, blended). SO… good… and so worth the extra training sessions! ;) Hopefully my recent weight gain was because of muscle and not because of the buttery, sugary, deliciousness of sin. Sigh.

I’m doing my physically assessment today to track my progress. WISH ME LUCK! ;)

BACK from VACATION!

Monday, January 21st, 2013

Hi everyone! I’m finally snapping out of holiday mode. While most people had to go back to work in early January, I took 6 glorious weeks off, went to a bunch of fun places and now I’m back, for good. Or, for now ;) I just got back from LA yesterday afternoon and am adjusting from the 25C weather to… whatever you want to call what we’re experiencing. Ha ha… :P

Here’s a quick snapshot of what’s been going on!

We took the boys to LEGOLAND and it was so fun! Everything was made out of Lego and let’s just say, THEY were the boss that day! Who taught Zachary how to read a map?! He would point to a direction and say, “let’s go there!” and we’d follow him like his little slaves. It was fun though! :)

This was at Tim and Joanna’s wedding with my bestest Bear! Look! We both match — purple!! :)

Me at Dolcissimo at the Shops at Chino Hills. It was a cutesy little bakery and there I was, doing “competitor research” :P

One of the best Korean BBQ places I’ve ever been too — at Rowland Heights. Here with the cousins! I smelled like meat for days :P We ordered one of every item on the menu — and when it time for VEAL CHITTERLINGS, I almost lost it. You can google it. It was… tubey :S

Mom’s SURPRISE birthday lunch at the Olive Garden. A good family friend owns a ginormous bakery in LA and gave us a box of petit fours. They were absolutely DELICIOUS and talking to him has given me a lot of insight for my business. Can’t wait to work on those ideas!

In other news: look who got a feature in Ryerson’s Alumni magazine?! Even though they called my company ‘Cake Designs’, at least they got the website right… which is all that matters! ;) I’ve been so blessed this past year and this was definitely the cherry on top! 2013 will be an amazing one.

And after MUCH reflection on everything that happened in 2012, my greatest achievement was losing 17.9% body fat in just a year. My clothes don’t fit anymore but I’m too cheap to go on a shopping spree so I’m just going to make do with what I have, for now! Ha ha.. spoken like a true Asian girl! ;) 2012 has been the best year of my life not only for my business but for personal achievements as well. If you want to know how I did it, don’t be shy and send me an e-mail! I would love to help other people be successful as well!! :)

I don’t even recognize the “before” girl anymore. WHO IS SHE?!?!

Bye bye BB!

Friday, July 20th, 2012

Before you read this post, I totally own up to what I did and admit that it was completely my fault **

On July 2nd, I had planned on going hiking at Tiffany Falls + Bruce’s Trail in Hamilton. I had slept in and was behind schedule in the morning to meet my crew at Denny’s in Mississauga for brunch. I dumped my Blackberry and iPhone (yes, I have one of each… long story!) in my purse, filled up my 1L water bottle and dumped it in there as well. I left it my bag on the passenger seat and realized I forgot my sunglasses so ran in the house to get it. When I went back to the car, my seat was WET! I realized I didn’t close the water bottle tight enough and it drowned my two phones. AHHHH!

Anyways, so I was pretty bummed the whole day. Everyone told me to NOT TURN IT ON and soak it in rice because rice absorbs all the water from the battery/phone etc. I disassembled it and left it in the car to dry for about 3 hours. After hiking (which killed me for days afterwards!) I thought, “Hmm… 3 hours is enough for the phone to dry, right?” and turned it on. A white screen came on and I short circuited it! BOO! :( So I got a new iPhone on Tuesday. iPhone 4S… and I’m so addicted and app-crazy.

I downloaded Instagram (love LOVE it!), Lemon (wallet app), Michael’s coupon thingy, Weight Watchers (think I’ll delete this), LOSEIT.CA (tracks my daily calories consumed) along with ANGRY BIRDS (which I suck at), Solitaire (for my mom), Reversi (kind of boring now) and some Mickey Mouse dance-a-thon for Zach and Talking Tom (also for Zach).

Look! He’s tweeting! :)

This is a tribute to my Blackberry. It’s been 2.5 years and I will miss you. We’ve had some good and bad times together. You’ve helped me answer my business e-mails in a timely manner and stood your ground when everyone made fun of your creator (RIM). You were a champ when BBM didn’t work and been with me since I started my journey. I know you were mad at me when you found out I cheated on you with the iPhone 4 and that’s why you took his life and your own life at the same time. I WILL MISS YOU! Now you will remain an empty shell in my drawer.

On a separate note: does anyone want a water-damaged iPhone 4 and Blackberry? :)

19 Days

Thursday, January 19th, 2012

Can you believe we’re only 19 days into the new year? It’s been the longest and shortest 19 days of my life. So much has already happened in my personal and professional life and I’m so so excited for what 2012 will bring. Everything’s happening so quickly. I wish I could update you but things are still up in the air. Let’s just say… I’ve grown from managing one business to… more than one… and possibly more than two :D I’m such a tease, huh?

Besides being a sugar artist, I’ve always wanted to become a motivational speaker. Or a speaker of some sort! My minor was communications in school and I loved presentations. You must be looking at the monitor thinking, “Is she for real?”… oh yes, it’s true! I love the feeling of butterflies in my stomach moments before I take the stage and the RUSH I get when I begin the presentation. The best part is when that peaceful calm takes over and the presentation flows effortlessly. That is, before I realize I’m naked in front of a room full of strangers and I’m dreaming. Eek! Hate it when that happens!

I started a new blog. Okay, I lied. I thought about starting a new blog but haven’t actually done it yet. It is a blog that documents the simple pleasures in life and it will keep me accountable to fulfill my not-so-NYR (read previous entry) of trying something new every week. It is a blog dedicated to stories, photography and inspiring others to chase after their dreams wholeheartedly. I might post the URL here but I’m not sure yet. I’ll definitely give it to you if you e-mail and ask for it! :) I’m not sure how personal to make it yet, but we’ll see!

Above everything else, I want it to be a blog where I can be real. I want to remember the little things I take for granted every day and document it so I can appreciate it.

Like this.

I promise I’ll blog more soon. It’s been a rollercoaster of an 11 days and I just want this ride to end. Here’s a sneak peek at my 2012 project:

c u soon.

Still Here

Saturday, December 10th, 2011

Just been reallllly busy! To summarize my week: went to BRAVO TV’s finale taping of WAY OFF BROADWAY (premiering on Feb 10th), had tons and tons of cookie orders go out, engagement cupcakes, Bravo’s Wizard of Oz cast party cupcakes, Minnie Mouse cupcakes + a wedding today.

Here’s TOTO on the infamous yellow brick road.

Hello from across the world!

Monday, October 24th, 2011

So I totally lied! I said I will post pictures of my trip as I take them but honestly, by 8pm each day, I’m already passed out. I feel so old :) We’re having a BLAST here and my brother described it best when he said, “NEED SECOND STOMACH”. We’ve been eating a LOT. Since we landed last Sunday, with the exception of one dinner, we ate out for every single meal. I’ve never eaten out so much in my life and it’s something I will never get used to. Food is incredibly cheap compared to Toronto but I’m a homegirl at heart and prefer homecooked meals compared to dining out. (yes, I know I had popcorn + rice krispie blob straight out of the bowl a few weeks ago for dinner but it still counts as homecooked! :P )

I have so much to tell you about and I don’t know where to start! I guess I’ll have plenty of time to do so when I get back! In the meantime, enjoy these pictures :)

Passionfruit Crepe Souffle @ BLT Steak

Our tasting menu @ BO INNOVATION – oyster with liquid nitrogen poured on top – SO GOOD!

I’m off to Macau this morning for yep- you got it! More eating :) Pix to come!

It’s September.

Thursday, September 1st, 2011

It’s September (3.27am) and I’m STILL working on this brochure for RMCF (no, not RCMP! :) ) I’m really happy with how the brochure is looking and I hope the client agrees tomorrow! Fingers crossed. Hmm… I have a meeting with the arts + events director before my client meeting. What should I wear? I think I should sleep now. I want Jenn to attend the meeting… not panda eyes.

Before I get my beauty sleep, I must fondant this giant cupcake cake. I think I deserve a latte tomorrow.

Happy September! Wishing you a great beginning to a great month :)

One Crazy Week

Wednesday, August 3rd, 2011

Hi! I’m still here :) Just backed up with orders, summer camp and Rocky Chocolate stuff. I’m putting together cookie favours and I have family visiting from Texas and Los Angeles next week (from both sides of the family, coincidentally) so I’m ONE BUSY GAL! Will post pictures of cakes later this week.

Cake Competition Designs

Thursday, July 28th, 2011

There’s a cake competition called Threadcakes that has been shaking the (online) cake world. Its origins can be traced back to a t-shirt company called Threadless, where ordinary people like you and I design shirts and accessories and upload them for others to purchase. Threadcakes’ concept is simple. Pick a t-shirt design, make it into cake form and win money. Easy! :)

I was up all night picking and choosing the design I should replicate into cake form. Seeing last year’s winners and their cakes, I knew I had to up my game. I can’t stick to my regular cutesy designs and expect to win unless I put flashing lights, a rotating disco ball and a pump that dispenses sprinkles in the air in 30-second intervals.
… however, I can’t help but gravitate towards these designs!

Take a guess – which one did I choose?
