DBC – Panna Cotta and Florentine Cookies

Can you believe it’s already March?! And yet another Daring Baker’s Challenge has come and gone. I look forward to the end of each month so I can do the challenge. When I found out February’s challenge was to make Panna Cotta, I was SO excited! I couldn’t wait! And ironically, I left it until the last minute to do it.

The February 2011 Daring Bakers’ challenge was hosted by Mallory from A Sofa in the Kitchen. She chose to challenge everyone to make Panna Cotta from a Giada De Laurentiis recipe and Nestle Florentine Cookies.

These are Florentine Cookies. They have my favourite oatmeal in them :)

The best thing about panna cotta is that it’s so versatile. You can tell by the flavours I made that it can be paired with virtually anything. The panna cotta itself has a creamy, almost silky texture. Its subtle flavour complements well with both sweet and tart. You can tell by my panna cotta shots that I love, love, love different flavours, colours and textures in my dessert.

Daring Baker’s Challenge – January

Hi everyone!
I am part of an online community of individuals who have a larger-than-life passion for baking called: The Daring Kitchen. Every month, a “host” would post a challenge that we all have to complete and post by a certain date. These challenges are not easy, are designed to stretch each one of our skills and are to encourage us to bake something out of our comfort zone.

The January 2011 Daring Bakers’ challenge was hosted by Astheroshe of the blog accro. She chose to challenge everyone to make a Biscuit Joconde Imprime to wrap around an Entremets dessert.



A joconde is a type of dense cake that you can design patterns on and make them into beautiful works of art.  You can only imagine all the creative juices running through my head when I decided to do these lovely, simplistic and cute polka dots! :)

I’m looking forward to February’s challenge! I hope it will be something pink or red… or dotted with hearts… or sparkly… or girly! But that’s all I ask ;)
