The Anatomy of a Cupcake

I watched an episode of Cake Boss last night (S04E24) for the first time in a long time. I used to watch their new episodes every Monday night but I missed the last 20 weeks! How did I forget about it? Anyway! Buddy and his 3 kids were making cupcakes for his wife and his 10th wedding anniversary. Their goal was to make 1000 cupcakes and arrange them on a table that said, “Marry Us?” (sounds cheesy, but it was adorable!).

They were all at the bakery and Buddy asked his kids, “Okay guys… how do we make cupcakes? What’s the first ingredient we need?” there was a long stretch of silence and his youngest son, Marco exclaimed, “FONDANT!” Soooo adorable. Marco, and his blond hair and striking blue eyes, is my favourite :)

Shannon from What’s Up Whimsy sent me this a while ago and I haven’t had the chance to post it. If only I could be this creative with my styling/photography skills. I’m practising!

My New Favourite Cupcake(s)

It’s been a busy few days in the kitchen for me. Lots of recipe-testing, lots of successes + *sigH*… lots of failures. Okay, one failure but it felt like a lot more! I’ve been keeping a wish list of all the recipes I want to try and I’m glad I got to cross off a few this week :) I feel so productive. I’ve also been putting together tons and tons of packaging (boxes/ribbons/tags) for upcoming events. Now I remember why I hate glue. So sticky and messy… blah!! Double-sided tape rocks my world :P



This apple cake was DELISSSH! It made my kitchen smell like Thanksgiving. The marriage of apples and cinnamon was a match made in heaven and when it hit my tastebuds, they thanked me repeatedly and anticipated the next time they would meet again. Then there was the creamy, rich, smooth frosting that complemented the moist and airy cake. The frosting that when eaten with the cake, filled each air pocket and my senses with sheer delight. And to top it off–the crispy oat topping added texture and CRUNCH and the perfect finish to my new favourite cupcake.

Anthony’s Angry Birds Cake

Hello hello! Happy Monday :)
I made this cake a while ago but forgot to post it. It’s my whimsical Angry Birds cake for my friend, Anthony. It was 3am and my mind was drawing a BLANK — I had no idea how to arrange the birds on my light blue canvas. I looked at my table and saw a comic book I bought from Hong Kong with a cartoon of a lot of businesspeople in suits squeezing through a door and a lightbulb appeared above my head!




I had some leftover modeling chocolate from another cake I made so I put together a ginormous slingshot for all the birds to “squeeze” through. Instead of the birds, I decided to let the pigs rule that cake so I shoved them all in there. The trick was to BALANCE and SECURE the pigs on a hardened chocolate surface (which was tough). Let’s just say… a lot of support materials were used! You see the blue bird in the slingshot? He didn’t get the memo that they were going to fling pigs instead.




I wanted to personalize the cake so I made an orange bird that I affectionately named, “Anthony Bird”. I was giggling the whole time I made him and I’m astonished at how similar they look. DO YOU SEE IT?? I’m going to exclusively make Angry Birds cakes that look like people. THINK OF HOW MUCH MONEY I’LL MAKE! I’m going to copyright it. Don’t steal my idea! :P

And the purple and pink birds are his girlfriends. It’s the glasses. Girls can’t get enough of ‘em!
Imagine they actually made new characters based on my cake. HOW COOL WOULD THAT BE? I’d be rich.

Cake Pops

I’ve always been envious of people who could produce beautiful cake pops like there’s no tomorrow. I’ve had some pretty horrible experiences with them in the past. I’d be super excited at first when I’m struck by a vision/cute idea. I’d run out to the closest Bulk Barn or Michael’s and stock up on candy melts of different colours and scoop more than I need, just in case. Then I’d bake the cake, anxiously wait for them to cool, crumble the it into a bowl, vigorously mix the frosting in, mold them into perfectly-shaped cake balls and pop them in the freezer. While it is in the freezer, I’d melt the chocolate over a double boiler, being super careful not to let any steam or droplets of water get into it or the batch is DONEZO! I’d wait for the chocolate to melt, stick a lollipop stick in a cake ball and coat it in chocolate. Of course, it would be a mess and the lollipop stick isn’t white anymore but stained with whatever colour chocolate I used. It isn’t perfectly smooth but with imperfections all over the place. I’d pause, take a look at the mess and with an exasperated sigh think, “THIS ISN’T HOW IT LOOKS LIKE IN MY HEAD”. Then walk away from the messy kitchen.

I’m pretty certain that cake pops hate me. Of course practise makes perfect but I’m impatient… I want to make beautiful pops now!! So yeah… what were we talking about? Oh yes! I am envious of people and their cake popping skills.

Alllll that’s about to change, girls and boys! I finally made a successful pop tonight. Yeah, took me LONG ENOUGH! And that perfectly smooth pop? That was the 6th attempt tonight. I’m making some sample designs for a client’s birthday bash. I figure it’s about time to tackle my fear. Just like my fear of meringues, souffles and macarons (which, essentially is a meringue).

I can’t wait for the day (I’m anticipating it to be sooner than later) when I can announce, “Cake pops are now available at Sweet Escapes!”… just wait! They will also be $10 each due to the blood, sweat and tears (figuratively, except the “tears” part… ) and love that went in it. Ha-ha. I am SO going out of business @ $10/pop! :)

{Recipe} Raspberry Pancake Canapes

Raspberry Pancake Canapes. I had a ton of raspberries from my garden, leftover fluffy pancake batter from Sunday morning’s breakfast + extra berry buttercream from a cake order today. Boom, boom, BOOM! :)




FYI, the secret to crispy golden edges is a bit of melted butter swirled around the hot skillet before the batter is poured in. Makes a big difference :) Find the recipe here

Ca-caww!

So I joined this Angry Birds fan page on Facebook and have been getting updates everyday. Many of the status updates start with, “Ca-caww!” cause I guess that’s the sound birds make? Anyways, that should explain the title for this post (if you’re wondering) :)



I am loving these bright colours and the cheeky smile on the pigs. You know they are up to no good!

I am designing ‘thank you’ tags to be attached to favours for a client’s 40th birthday bash. I am so incredibly excited for this because I love packaging + design and I don’t get to do it very often. It is definitely something special :) The theme is pink + purple. And y’all know how much I love those colours (see previous unicorn post).

I’m also excited because I got new FUN fonts to use at my leisure. I am such a geek :D

Call me crazy but I’m so excited it’s Monday! I had 5 orders in the past two days and the fact that I’m semi-functioning is a miracle in itself (thanks to a 4.5hr nap). I really miss those days when I could say, “Thank God It’s Friday!” and do my Friday-happy-dance. Now it’s “Thank God It’s Monday!” but I usually get weird stares from people when I say that. I can feel you staring right now!! :)

It was Claire’s 4th birthday party today and their parents ordered a fairytale-esque unicorn cake from me with rainbows and flowers and glitter… and more glitter! Gosh, I LOVE glitter! It makes the cake come alive (figuratively) and who doesn’t like sparkly things? I have to admit, I sometimes get carried away with the glittering part and over-glitter. Is that even possible? So when the birthday girl/boy takes a picture with the cake, all you see is one big bright spot from the camera flash. That’s when you know you’ve over-glittered.



I love using the element of vertical lines on the bottom tier because it creates the illusion that the cake is taller than it actually is. And I love the purple/pink colour combo. Growing up, those were my two favourite colours! I secretly still love it :)

This cake was a moist chocolate cake with banana buttercream + 4 layers of sliced bananas. Oh-em-gee deliciousness! This was my first time making banana buttercream and I had a fear that it would turn brown if I left it out too long so I blended the bananas in RIGHT when the cake was ready to be filled + layered. The buttercream was just the right amount of sweetness + it was so banana-yyy! I couldn’t stop eating it and it tasted even better with the chocolate cake. If you’re wondering… no, I did not take a chunk of the cake out — I had lots of scraps from leveling the cake tops and we all know that cake tops + banana-y buttercream + banana ends = happiness :)

Anyways… I’ll post the pictures from the rest of the weekend later this week. I regret not taking photos at the bridal shower cupcake workshop on Saturday but I’m sure they’re on Facebook somewhere. Go look for them :)

Katie’s Polka Dot + Elmo Cupcakes

It’s Katie’s 1st birthday today and her mom ordered a dozen red+white polka dot + Elmo themed cupcakes. I love it with clients give me the design/colour combinations so I don’t have to think about it… hee hee :)

This is what I think about when I’m playing with sugar. One of the petals broke on my daisy and it reminded me of my schoolgirl days at recess when my friends and I would find wildflowers, pluck the petals out one by one and recite, “He loves me… he loves me not… ” I thought of that today… and this photo was born :)
