The Fab Five: Gourmet Teas

I’ve always been a tea drinker. I’ve been drinking teas ever since it was diluted and given to me in a bottle when I was still in my walker! Being Chinese and having dim sum as a traditional weekend ritual, it is difficult not to separate myself from this very Asian beverage of choice.

Although I’ve been drinking tea for almost all my life, I’ve been a gourmet tea drinker since 2008. March, to be exact. It was the soft opening of FOUR Restaurant and I was invited to dine there before it was open to the public. I could order whatever I wanted to (including one alcoholic beverage) and everything was on the house. I ordered green tea to finish off my meal and it was simply AMAZING! It was light but fragrant with citrus notes and a hint of pineapple. The tea bag was even made out of organza instead of its usually Lipton-style paper bag (or whatever the material is??). I asked the server what brand it was and she brought the box out to show me… thus began my love for gourmet teas! :)

Check out my top 5! (in no particular order)…

1. Mighty Leaf
The one that ignited my love for gourmet teas. Available at Longo’s, Pusateri’s and any higher-end supermarket. Must try Green Tea Tropical. If you are unsure of the one that’s right for you, try the Green & White Tea Variety which comes with Green Tea Tropical (5), Organic Spring Jasmine (5), Organic Hojicha Green Tea (3) and White Orchard (2).

2. Distinctly Tea
I received Distinctly Tea tea as a wedding favour a few summers ago and it took black tea to the next level. It was Lychee Black Tea– a bold black tea taste with just a hint of lychee. I’m not a fan of heavily-scented fruit in my tea but this is just right! I’ve since ordered more lychee black tea leaves and Jasmine pearls. The drawback of Jasmine pearls is that it is really mild and you need to steep a lot of it to get it to taste good.

3. David’s Tea
I got this sampler gift set for my birthday this year and I LOVE it! I love the box and the little individual compartments. I love how each tea sample is unique and I love how I can use the box after I’m done with the teas to store other things (although it might smell like leaves afterwards!). I bought agave nectar honey sticks yesterday from David’s Tea and I’m excited to stir it in my tea.

4. Revolution Tea
I discovered this at Chapters this afternoon. I went on their website hoping to find the cute teapot I saw but no luck! Instead, I found THESE!


It comes in WHITE too!

5. Tazo Tea
Starbucks uses this tea in their shaken black tea beverage (which the BF and I always order). To save $, I bought a box of AWAKE with a bottle of CLASSIC SYRUP and have made pitchers of iced tea for the past two weeks. One tea bag lasts a LONG time and I don’t add that much syrup in it so it’ll last longer. I feel so frugal :) I just clicked the “AWAKE” tea from the link on the sidebar and this creepy old-man-hands just served a cup of piping hot tea to me on their website! CHECK IT OUT (or err… maybe don’t?). At least they could’ve screened the hands more thoroughly at their hand modeling audition! Geez.

My Annual Treat

Guess what? I hate sweets. I really do! I love sugary drinks (strawberries & cream frappaccino from Starbucks) but I’m not a fan of desserts. I love making desserts and I love cute things but I don’t like to eat dessert. Now, I’ll just wait for a bit as you pick your jaw up from the floor :) …. ready? I have to taste the desserts I make and my palatte is extremely sensitive so the cliche “less is more” applies in my case.

Although I’m not a fan of sweets, I make an exception on my birthday. Every year, I go to Pusateri’s at Bay/Bloor and get a Mata Hari slice (coconut dacquoise sandwiched between layers of mango and coconut mousse and papaya puree), an Opera Cake slice (layers of chocolate cake infused with espresso and coffee buttercream) and a Key Lime Tart (bittersweet chocolate short crust with key lime curd). I bring it home and my family and I dig into it… and I’m good for the year! :)




I don’t even really like the Opera Cake. I love coffee but I’m not really a chocolate person… unless it’s chocolate-dipped strawberries! MmmmmMmm! And it has to be 80% dark chocolate… not just any chocolate ;) The Opera Cake, if made properly measures exactly 1.5″ in height… no more, no less. I actually measured it cause… I wanted to see if it was made properly *blush*. Guess what? IT’S EXACTLY 1.5″ tall! Good job, whoever made it! :)

That’ll be my next challenge… the oh-so-dreaded Opera Cake. I always look at making a successful Opera Cake as a milestone that I’ve made it in the pastry world. I’m not there yet… but to this I say… CHALLENGE ACCEPTED! (are there any “How I Met Your Mother” fans out there?)

Chipster Brownies (recipe)

One thing I love to do is to give to others. It can be anything from a cookie to a handwritten note – I love little tokens of sentiments. I started a tradition ever since I discovered my passion for baking and that is to give treats out to my friends on my birthday. Around the end of April I begin to brainstorm what I would like as my treats. It has to be delicious and photograph well (It’s not my style to give out ugly and disgusting treats :P !) It also has to be something that I don’t offer regularly and that is unique.

Last year, I had my birthday at Panorama Lounge and gave out spicy cheese crackers in mini pink polka dot take-out boxes. This year was very last minute as in less-than-24-hours-before-my-dinner last minute! :S I came up with Chipster Brownies – brownies baked with chocolate chip bits in them. I also got to use my square muffin pan which was also a treat.



For the indecisive child in all of us! ;)


I wanted to keep the packaging simple (cause simple is always better!) and used my new hot pink crepe paper ribbon to add a splash of colour. I didn’t realize that they’re SO difficult to work with! It kept ripping and breaking. I settled for satin trim organza ribbon in the same colour instead :)

Want the recipe? It is so amazingly easy.

This can be done with any cookie dough and brownie recipe since they both contain butter in them. Since they’re both dense, they will bake evenly and rise properly. This isn’t the recipe I used but it is quick and easy! :)

Chipster Brownies

INGREDIENTS


1 pkg brownie mix
1 pkg cookie dough, frozen

METHOD

PREPARE the cookie dough and brownie mix as directed on the packaging.

SPRAY a 9 x 13 non-stick baking pan or line a baking pan with tin foil.

BREAK pieces of the cookie dough and randomly place it in the pan. Pour the brownie batter so it covers the cookie dough. Alternate the cookie dough and brownie batter steps and top it off with the rest of the cookie dough.

FOLLOW the baking directions on the brownie box.

A Guu’d Birthday

Hi everyone! Happy weekend! :) I’m glad the sun came out today… I almost forgot what it looked like! I finally edited my birthday photos from Guu Izakaya. Guu first originated in Vancouver and the small tapas-style pub quickly became popular amongst the yuppie crowd.

The average wait time on a weekday is 1.5 hours. That’s average wait time. Is it worth the wait? Oh, YES it most certainly is! :) My brother arrived there first at 7pm and put his name and # on the list and the hostess informed him that it would be an hour since we required a large table (8 people). He then went to Starbucks to wait since it was HUMID and POURING… I met him there and got my usual venti iced black tea. Not even 10 minutes later, he received a phone call that our table was ready! WHAT WAS I GOING TO DO WITH THE DRINK?! I brought it in and of course got in trouble – oops! I tried to drink it as fast as I could but got brainfreeze. Luckily the BF was there to save the day and drank the whole thing in a few gulps! :)

I ordered most of the food that night based on my memory of all the good dishes we had last year. My friend “checked” me into Guu on Facebook and a ton of people messaged me their recommendations. Social media is so convenient :)

Here are some of the dishes we had that night.


Enoki Hotate Bacon – 9/10 (bacon wasn’t smoked and it wasn’t too salty)


Tontoro – 7.5/10 (a bit too salty for me)


Karubi – 6.5/10 (nothing special – not sure how you can make short ribs “better”)


Deep-fried Brie Cheese – 7.5/10 (not a cheese person – I ordered this for the table)


Ikapiri – 8/10 (I got punched in the face with spice but loved it)


Yakiudon – 8/10 (can’t go wrong with udon noodles)


Takoyaki – 8/10 (reminded me of my time in Hong Kong)


Okonomiyaki – 6/10 (too chewy for my liking)


Cheese Bibimbap – 9/10 (soooo good! Lots of people recommended it)


Nasu Miso – 9/10 (I love eggplant and the sweet miso was the perfect complement to this dish)


Ebimayo – 10/10 (SO good! I’m not a fan of shrimp but I LOVED this!)

And for dessert…


Banana Tempura – 10/10!!!!! (so so so so good. I love bananas and you can’t go wrong with deep-frying it!)

Of course, someone snuck off and informed our server that it was my birthday. He got the whole restaurant to sing “Happy Birthday” to me. Not sure if it was English or Japanese because I was so embarrassed but I still appreciated the gesture. Someone video-taped it so I must stop it from circulating around the Internet!

It was a GREAT birthday! I came home to 300 birthday messages from friends and family all around the world – I felt so loved :) My parents and I then shared a few desserts I got from Pusateri’s. I get the same thing every year – Opera Cake, Mango/Papaya/Coconut Mousse Cake and a Key Lime Chocolate Tart. Hooray! :)

Watermelon Pops (recipe)

THANK YOU everyone for the birthday wishes! I had an awesome and relaxing day yesterday… I wish every day was my birthday :) I’m currently editing photos from yesterday’s trip to Guu Izakaya so I will be posting soon! At the end of a full day walking ALL OVER downtown (the BF didn’t let me take the subway and it was RAINING TOO!), I came home to find 300 birthday messages. You all sure know how to make a girl feel blessed! ;) Thank you, thank you, thank you!

My WHAT’S COOKING magazine came in today and I found these cute Watermelon Pops I want to share with you.

Watermelon Pops

INGREDIENTS

1 cup sugar, divided
1 pkg. (85 g) Jell-O Lime Jelly Powder
2 cups boiling water, divided
Ice cubes
1 cup cold water, divided
1 pkg. (85 g) Jell-O Strawberry Jelly Powder
3 Tbsp. Baker’s Semi-Sweet Chocolate Chips
125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened
1-1/2 cups thawed Cool Whip Whipped Topping

METHOD

MIX 1/3 cup sugar and lime jelly powder in medium bowl. Add 1 cup boiling water; stir 2 min. until completely dissolved. Add enough ice to 1/2 cup cold water to measure 3/4 cup. Add to lime jelly; stir until ice is completely melted. Refrigerate 25 min.

MEANWHILE, repeat with remaining strawberry jelly powder but do not refrigerate. Pour into 16 (3-oz.) paper cups. Freeze 20 min. Stir 1/2 tsp. chocolate chips into gelatin in each cup.

BEAT cream cheese and remaining sugar with mixer in medium bowl until well blended. Stir in Cool Whip; spread over jelly in cups. Cover with lime jelly. Insert wooden pop stick in centre of each cup.

FREEZE 3 hours or until firm. Dip the cups in hot water for 15 seconds and remove pops from cups just before serving.

I love how they look so summery! Can’t wait to make these :)

It’s my Birthday!

It’s actually tomorrow but I’m not going to have time to blog tomorrow so TA-DA! :) I’ve come to realize that my job is extremely birthday-focused (how fun does that sound?). Not a week goes by without making a birthday cake or two for unsuspecting birthday girls and boys. I decided to take this week off and RELAX… do the things I love to do and not think about work. BUT I wanted to make myself a birthday cake so I made a little exception :) It’s not sad, as many people may think. I am a perfectionist and a little OCD (don’t they go hand-in-hand?) and I don’t want anyone else to make my cake but myself! This goes for my wedding cake as well but we’ll cross that bridge as we approach it!


Daisy Love


I wanted to make a pink cake with different pastries on it like cupcakes, cakes, cookies, pies and tarts on it but I didn’t have time. I have been thinking about DAISIES a lot and how happy they make me. I absolutely adore yellow and white together. Especially with the gloomy weather we’ve been having lately, I figured a daisy cake would bring some edible sunshine into my life :)




I had to rush a little to make it to our family BBQ so the layers are a little crooked here. SIGH! It’s okay, it’s my cake :) I like finding perfection in imperfections! Or another word… “Whimsy” ;) I LOVE DAISIES! When I lived downtown, I always had fresh flowers in my room – it brought me much joy and added a touch of colour to my decor.

OH! And I got the pink mini cake stand for my birthday as well. I got a yellow one – they’re both so cute! Will post about that later. The cake, although it looks big… is only about 8.5″ in height! The flavours are 1st tier – chocolate cake and key lime buttercream, 2nd tier – vanilla cake with chocolate buttercream, 3rd tier – vanilla cake with strawberry buttercream. When in doubt about flavours, choose ALL OF THEM! :)

As I was taking a relaxing stroll around super Wal-Mart (LOVE that place!), I was delighted to find that they carry CIAO BELLA GELATOS AND SORBETS in the frozen section! :) :) :) I’ve adored this brand ever since I received their cookbook as a birthday gift last year. Their recipes are easy to make and oh-so-delicious!




We have a family BBQ tomorrow and I decided not to bake anything for once but instead, browsed the frozen section at Metro. Ciao Bella Mango Sorbet was 50% off! :) $3! They also have lemon sorbet but I’m not a fan of lemon so much.


Check out these flavours – Strawberry Chardonnay! WHAOW!!


I visited CB’s website for the first time tonight and fell in love with the colourful packaging. To me, bright colours evoke yumminess and I was practically drooling! Some of the flavours I want to try are: banana mango, key lime graham, passion fruit, coconut, blood orange, malted milk ball, chocolate s’mores and blackberry cabernet. Okay, let’s just say–all of them! I like sorbets more than gelatos though so maybe someone else can try the gelato and let me know how they like it! ;)

I’m going to drop by Whole Foods this week to check their flavours. My birthday’s on TUESDAY and we’re going to Guu Izakaya to celebrate… woohoo! Then I’m going to go to Pusateri’s to see if they have my favourite Mata Hari dessert (vanilla cake with coconut, mango and papaya mousse)… this is going to be a busy birthday week! :)

Cupcake Workshop Pictures

We had our SECOND cupcake workshop at Paintlounge last night and it was another huge success! We had a smaller group this time which I prefer because it allowed the attendees to talk to each other (as well as with myself) in a casual and fun environment. Last time, we had about 25 people and we were decorating cupcakes–elbow to elbow! We may or may not have had a few cupcake accidents which were caused by my elbow. Oops! :S




I was also pleased that we had a guy there too! YAY! :) Each attendee received half a dozen cupcakes with pre-bagged coloured icing and a wide selection of sprinkles, sanding sugars, fondant flowers, cake flakes, pearls, dragees… you name it! I did a demo of all the designs that the different piping tips made and they were off! :)
